Lemon-Butter Veggies
Fresh lemon gives these summer favorites a bright flavor

Ingredients
  1. 1 1/2 cups baby carrots, halved
  2. 1 1/2 cups cauliflower florets
  3. 1 1/2 cups summer squash, sliced
  4. 1/2 cup red onion wedges
  5. 2 tablespoons melted butter
  6. 1 teaspoon honey
  7. 1 tablespoon fresh thyme leaves
  8. salt and black pepper, to taste
  9. 1/4 lemon
Instructions
  1. Prepare an 18x12-inch double layer of foil.
  2. Toss together carrots, cauliflower, summer squash, red onion, melted butter, honey, thyme, salt and pepper.
  3. Place mixture in center of foil, bring short ends of foil together and fold twice to seal.
  4. Fold in the sides to seal, leaving room inside for steam to build.
  5. Grill over medium-high heat for 15 minutes or until vegetables are tender, turning packet over halfway through grilling.
  6. Squeeze 1/4 of a lemon over top before serving.
Notes
  1. Serves 4. Per serving: 100 calories, 6g fat, 3.5g saturated fat, 15mg cholesterol, 45mg sodium, 12g carbohydrate, 3g fiber, 2g protein.
