Patriotic No-Bake Sugar Cookie

Ingredients
  1. 1 ½ cups roasted cashews (unsalted)
  2. 4 oz vanilla Greek yogurt
  3. ¾ cup rolled oats
  4. ¼ cup strawberries
  5. ¼ cup blueberries
  6. 1 tablespoon pure vanilla extract
  7. 3 tablespoons pure maple syrup
Instructions
  1. Place the cashews and oats in a food processor and blend on high for about 1 minute, or until finely ground (like flour).
  2. Transfer to a medium mixing bowl.
  3. Add the vanilla and maple syrup.
  4. Mix until combined.
  5. Roll mix into 12 equal balls and flatten into a cookie shape.
  6. Place about a teaspoons of yogurt on each cookie and spread.
  7. Layer strawberries and blueberries on top of yogurt and store in an airtight container in the refrigerator for 3-5 days.
