Sneaky Pesto
Kale goes undercover in this sneaky and yummy recipe. Use this pesto as a spread or in brown rice, pasta, soup, and mashed potato dishes.

Ingredients
  1. 3/4 cup fresh basil leaves
  2. 1/2 cup olive oil
  3. 1/2 cup washed fresh spinach leaves
  4. 1 teaspoon minced garlic
  5. 1 cup washed fresh kale leaves
  6. 1/2 cup Parmesan cheese
  7. 1 cup washed fresh parsley
  8. 1/4 cup walnut pieces
Instructions
  1. Place all ingredients in a blender or food processor and process until very fine. Store mixture in the refrigerator for a week or in small squares in the freezer for up to 6 months.
Notes
  1. Serves 12 (Serves about 12 as a spread, more as a seasoning). Per serving: 112 calories, 12g fat, 2g saturated fat, 4mg cholesterol, 70mg sodium, 1g carbohydrate, 0g fiber, 2g protein.
