Strawberry Yogurt Bombe
Serves 8
  1. 4 cups fresh strawberries, sliced
  2. 1-cup fresh raspberries
  3. 1-teaspoon sugar
  4. 1 cup plain nonfat Greek Yogurt
  1. Shaved chocolate (use a potato peeler)
  2. Shaved fresh mint
  1. Place the berries in a large mixing bowl and lightly mash them with a ladle.
  2. Place the yogurt in a large glass bowl.
  3. Top the yogurt with the mashed berries.
  4. Press down very well to compact the berries.
  5. Invert the bowl onto a plate.
  6. Garnish the “strawberry cake” with shaved chocolate and mint.
  1. This cake can be cut with a serrated knife and served with a dollop of fresh whipped cream.
